Grilled Spicy Skirt Steak (Page 537)

I made this super simple skirt steak recipe this summer. There's not much to it. I rubbed the steaks in a mixture of garlic, salt, chili powder, cumin, sugar, pepper, allspice, Worcestershire sauce, and vegetable oil and my special gentleman threw them on the grill. Done! I would certainly make this quick and easy skirt steak recipe again. The spice rub had a good flavor. It could have had a little more kick to it, but it tasted good. It was a nice recipe for a simple dinner on a beautiful summer evening (oh, how I miss summer!)

They say that absence makes the heart grow fonder, but I have to admit that I am pretty damn fond of my special gentleman even when he is around! I could happily go on and on about how I hit the husband jackpot. He's awesome, and I appreciate him tremendously. So typically when he travels I do miss him, but it's not a revelation to me. He's great, so of course I miss him when he's not here! Lately, though, absence really has made my heart grow even fonder!

My special gentleman was away for work for the entire month of February. He came back for two weekend visits, but other than that, he was gone. And it was rough. I am big these days (see picture below), and things that once came easily to me (breathing, walking, sleeping, etc) are not so easy any more. Apparently it's not just about the weight. Humans aren't really built well to carry two babies at once, so carrying twins is a huge burden on your heart, lungs, kidneys, etc, which makes everyday activity pretty tough. My special gentleman has been fantastically helpful throughout my pregnancy so far, so when he is not around it's a big adjustment. I really feel his absence.


He has to do a bit more traveling in the next month or so, which I am not terribly excited about. But luckily our friends and family are super supportive. My parents, my in-laws, and some very dear friends are all visiting at various times to help out while my special gentleman is away. And my friends here have been awesome -- bringing me groceries, meals, cookies (lots of cookies!), etc. It's very sweet. And soon all of his pre-baby traveling will be done and he will be home until these little ladies make their appearance. I am just over 25 weeks now and hoping to make it at least another 6 or 7 weeks! But it could be sooner than that. It's a little scary!
